Sarchimor is a newly grown variety currently entering its fourth year of harvest, making this its very first production lot. This year, the farmer trialed three different processing methods(Natural, Washed and Honey) to split the total production of 4–5 tonnes.

The washed process is the micro water washed method. This method uses customized machinery to minimize water consumption while perfectly replicating the delicate flavor profile of the traditional washed process. Inspired by de-pulping machines used in Colombia, the equipment features a flotation tank paired with a slotted rotating drum. As cherries are conveyed to the flotation tank, they are sorted by density. They then pass through the rotating drum for size separation, resulting in three distinct grades: Specialty, Premium Commercial (Grade 1), and Commercial Grade 2. All rejected cherries, pulp, and skin are collected separately and repurposed as fertilizer for the coffee trees. By eliminating traditional washing tunnels, this method reduces water consumption by up to 60%. Yet still deliver delicate profile of a traditional washed coffee.
